Potato Blintzes with Sautéed Onions and Mushrooms
1 Package of Golden potato blintzes
Topping:
1 large onion
3 cups of fresh mushrooms
1 TS olive oil
1 ts salt
1 ts black pepper
1 TS garlic salt (or fresh garlic)
Garnish: fresh parsley
Slice onion and mushrooms. In a medium-sized frying pan, heat oil, salt, pepper and garlic. Add onions. Sautee onions until soft; add mushrooms and stir.
Pour on top of blintzes. Add parsley for garnish.
